This role connects consumer expectations with ingredient functionality and production reality. It defines what success looks like, develops the bench pathway, compares prototypes and keeps flavour, texture, shelf life and target cost moving together.

A new bakery concept, a private-label range refresh, an underperforming product, or a benchmark that needs to be translated into a commercially distinct offer.

This role evaluates mixes, improvers, fillings, inclusions, flavours and functional ingredients against the finished-product brief. It coordinates technical information with suppliers, identifies workable alternatives and helps avoid dependence on a single fragile solution.

A custom ingredient system, a cost or availability challenge, a cleaner-label target, or a product that requires reliable supply across multiple production sites.

This role plans trials, establishes critical process settings and examines where a formulation behaves differently at commercial scale. It works through mixing, forming, proofing, baking, cooling, freezing and finishing variables to protect consistency and operational simplicity.

A product moving into factory production, a difficult line trial, yield or waste pressure, freeze–thaw instability, or quality variation between shifts and sites.

This role organises product and ingredient specifications, supplier documents, allergen information, technical approvals and controlled updates. It helps turn development decisions into clear records that can support customer review, production handover and ongoing optimisation.

A private-label approval, a new supplier or co-manufacturer, a specification gap, an ingredient change, or a launch that needs a practical and traceable technical file.
